Yesterday, I moved to feeding the starter every 12 hours. Just in case there are new readers to this series, I am using the method at the King Arthur Flour website. I am currently on Day Four.
Since I can’t feed the starter at 1 AM, I waited until around 9:30 PM last night to feed it. The pictures will look a lot alike from now on I think, but I figured I should still post them!
Taken after I scooped out about half of the starter to put in the fridge. I had around 1 cup of starter left in the container.
I think I was probably supposed to leave less than 1 cup in the container but it is very difficult to tell where the gradations are right now. After scooping out half the starter, I fed it like usual: 1 cup of unbleached all-purpose flour and 1/2 cup of spring water.

This morning, around 9:30 AM, I moved to Day Four on the method. I am not sure I did this step correctly since I did not scoop out half the starter to “discard.” I just added 1 cup of unbleached all-purpose flour and 1/2 cup of spring water, and then I stirred it until there was no dry flour left.

I checked on the starter after church this morning and it still looks happy. There are some bubbles on the surface. I probably will scoop out half the starter though tonight before bed and feed it like usual. If I don’t, I might end up with sourdough starter all over the counter!
