Ever since we bought our Drinkmate carbonating system, we have been making our own soda instead of buying it. Sadly, our CO2 cylinder is currently empty and we have to wait until the end of the month to buy a new one (or two!) We definitely have been missing our homemade soda though!

Even though we can’t currently make our own soda, I went ahead and made root beer syrup anyway to store in the fridge until we buy a CO2 cylinder.

Someday, I’d love to make root beer syrup from scratch, but since it would take a bit to gather all the ingredients for that, I just use simple syrup and root beer extract (or concentrate) to make my root beer syrup. The kids certainly don’t seem to mind because every time we make root beer soda, it disappears really, really fast!

We like to use this root beer extract from The Spice House for anything needing root beer flavor. I’ve used this in root beer float macarons also!

Root beer syrup using root beer extract also takes only a few minutes to make. It’s a quick and easy way to make your own soda and you know exactly what is in it!

I have not used the root beer syrup for anything else except for soda or for Josh to make root beer ice. I’m sure there are other ways to use it though that I haven’t thought of yet!

Root Beer Syrup

Yields1 Serving

Ingredients:
 2 cups water
 2 cups sugar
 2 tsp root beer extract

Directions:

In a small saucepan over medium heat, dissolve the 2 cups of sugar into the 2 cups of water.

Mix in the 2 teaspoons of root beer extract.

Allow root beer syrup to cool slightly then pour into two 1 pint mason jars. Store in the fridge until ready to use.

P.S. Once we have a new CO2 cylinder, I’m hoping to make cola syrup from scratch. Hopefully, that will actually happen! Cola certainly has an odd mixture of flavors!
