We received several large jalapeno peppers from our CSA and hadn’t gotten around to using most of them.  Today, I was thinking about the jalapeno peppers and wanted to find a way to use them.  While I was doing that I ended up working near some avocado trees.  We also had avocado, so I wanted to come up with a way to use both.

Sliced Jalapenos

Prepping the Avocado

First I discovered some recipes for fried avocados.  The one that stuck out the most was this fried avocado taco recipe from Bon Appetit.  We used that recipe as our starting point, but did make a number of changes based on what we had around.  Lynn added several spices to the breading used for the avocados.  They included garlic power, smoked paprika, and ancho chili pepper.

Fried Avocado

Since we were going to do fried avocados, I thought that fried jalapenos would also be good.  I got the idea from a recipe from PepperScale.  Their recipe seems to be more of a tempura style.  Since we already were going to have the breading for the avocado, we decided to just use that.  We did get the idea for the spices in the breading from PepperScale.

Fried Jalapeno

Lastly, I wanted to have some sort of ranch dipping sauce to put on the tacos and use for dipping avocados and jalapenos.  I couldn’t make anything too spicy since our kids won’t eat anything spicy.  Chipotle powder is something we use a lot because we like the smokey taste, and it isn’t so spicy that the kids will not eat it.  Unfortunately, we were out of ranch spice mix so I had to make some real quick.  I found a mix that I liked at Wellness Mama and quickly combined all the spices.

The ranch dressing was made out of :

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 1/2 tbsp ranch mix
  • 1 tbsp lime juice
  • 2 tsp chipotle powder

Once we got all these random and disparate things made, we combined the fried avocado, fried jalapeno, black beans, chipotle lime ranch, lettuce, and cheese to make our avocado and jalapeno tacos.  We also added a favorite hot sauce of ours called Habacado.

The avocado and jalapeno tacos turned out to be really good.  I know this is an odd combination of ingredients that most people will not enjoy.  We do like avocado and some spicy food so we did enjoy these tacos.  Fried avocado is really good; it is crunchy on the outside and creamy on the inside.

Our children didn’t even complain all that much so I guess the food wasn’t too bad.
